Vegetarian Recipes/Tips?

I like the Trader Joe's soy milk...most of the other stuff I do not like at all. We drank rice milk for years - the soy gives more protein and possibly more calcium (I could be wrong about the calcium.)

We had pasta last night...but it wasn't the same. Pad Thai with peanuts...mmmmmmmm...
 
how do you all do with digestion of the soy beans and the beans in general?
and do you not eat dairy at all?? i can not tolerate dairy, unless its lactaid. i havent tried rice milk though........that is an option.
i have such stomach issues and cant eat a lot of those "gassy" type foods without taking a million pills.
i could live without meats, but i am not sure i could do without seafood & eggs.
 
I have no problems with soy beans or any other beans. It's mostly because I have been eating so much of them for so long. The bacteria in the intestinal tract changes over time to allow for better digestion without all the gas problems. When someone, who hasn't eaten a lot of plant foods like beans and fresh veggies, starts eating them there can be a lot of gas and bloating problems. Those tend to go away after just a week or two though as the digestive system adjusts.

I can't have dairy myself as well as egg yolks. It really isn't that hard, but I am very used to not having these things.
 
Dairy and I are not friends. It took me a long time to give it up. Once I did I felt worlds better. I'm ok eating eggs but choose to just eat the whites when I do eat them. Eating more plant foods does take time to get used to but your body will adjust.

I will pick up soy milk from Trader Joe's. I have not tried theirs.
 
Just a quick tip if you have to bake without eggs. Soy powder (you can buy this from bulk bins in health food stores) is a very good substitute. Mix one heaping Tablespoon of soy powder with two tablespoons of water for each egg needed for the recipe. In cakes add 1/4 to 1/2 teaspoon of baking powder to help make the cake more fluffy. :)
