I was also going to suggest casseroles, as mentioned above. Tuna casserole, tater tot casserole, spaghetti casserole. Stuff you can make ahead, then let them heat up later.

I also agree with you Kate. I think taking the kids there at this point is a mistake, especially if they don't want her brain stimulated. There's no way the kids aren't going to cry for mommy and she will definitely hear them. Not only that, but as of right now every one is hoping for recovery. Let them see her when she is awake, not when she looks like death with tubes sticking in her body. If things were to turn for the worst, that would be one thing, but not now.
 
I will keep you all in my thoughts. What an awful thing to happen.

A baked Ziti or lasagna is really easy to make and can be frozen if they have too many meals all of a sudden. For the Ziti I just cook the pasta (should still be a little firm) and then add the sauce and cheese. Bake for 45 minutes at 350. I don't use a recipe for lasagna either, I just layer the lasagna noodles with a cheese mixture (ricotta, egg, bread crumbs, mozzarella cheese, and some basil) and sauce until I have used everything and then I top it off with more mozzarella cheese and bake at 350 for 45 minutes to an hour.

Well, today we got pretty promising news, but still "means nothing yet." They decided to start weaning her off of her sedative today & have done so little by little. They plan that tomorrow her last dose will be in the AM & quite possibly removing the breathing tube.(depending on how things go) Her brain scans & vitals all have remained stable, the same. Which is a good thing, but we are hoping the next ct scan will show improvement in her brain.

This evening she was opening her eyes a little & blinking when asked to & when her husband asked for her to squeeze his hand, she did. This is such great news to us all & can only hope she continues to progress in the coming hours, days, weeks, & months!

Awesome Kate! I've been watching for an update. I'm so glad it's good news.
 
Have you been keeping up with the new baby's baby book? Maybe you could talk to the babysitters, etc. and get a time line. "On Monday, he was changed 5 times and ate x oz at each meal," that kind of thing. True, she wasn't there for it, but at least she'll know.
 
Everyone in the family has been pulling their weight keeping the baby as well taken care of as possible & things recorded as OCD as we can for her.

We are getting updates everyday, but i dont want to flood every day(a few times a day) with info.

Today was, so far, the best day of news we have gotten since the baby was born.

This is a case of miracles really existing!!!!

As things are still very far from over, im happy to announce that she is pulling her weight & IS making such day to day improvements. She knows she has a family to go home to, so shes truly fighting!

The breathing tube is gone & she has been moved from the ICU to the Stroke unit! Still nothing super duper huge, but at any rate Hooray!

Today they (with the help of a lift) had her sitting up for a portion of the afternoon & had her food network channel on!

Through the day the nurse asked her a few questions & as before she would only blink, today she nodded. She was asked if she had 3 kids, she nodded yes, then was asked if all 3 of them were boys, she nodded no! So, this means she is understanding things, which is by far the best sign the family has had since this whole thing. When her husband was on his way out (they sometimes sign with their kids) he signed I love you, she did it back & also when a friend was leaving she gave the thumbs up.

This is all truly either an act from a higher power that i will never understand or a true miracle!

As of next week, given everything keeps going as wonderful as it has been they are planning to take her to a nursing home to keep up with her therapy, physical & speech. They are guessing, if she keeps up the improvements she should have to stay there only about 6 months! As thats still a very hard thing to accept, we are lucky to still have her!

I'd imagine the kids will be able to go see her in the nearing few weeks or month.

Im so incredibly excited for her & the family right now! High five to the big guy!

Oh Katie! My heart aches for your cousin. I will definitely pray that she makes a full recovery. I know I don't get on here much any more but I'll try to pop in for updates.
 
What a great mothers day!!!

Her husband brought her gifts from the kids & a card they recorded their voices on. It made her smile, only on the left side, but AMEN, shes getting better EVERYDAY!

Her feeding tube through the nose has been removed & now she has one in her tummy. She has a few more days & another scan in the stroke unit & then will be moved to an acute care facility for at least 4 to 6 weeks in their stroke unit & then they will be reassessing her to see where she will go from there. We are praying she will be able to go home with the help of an in home nurse at the end of this round!

I cant thank everyone enough & all their great vibes being sent to her & the family.
 
Today she passed her swallowing test & her husband fed her chocolate pudding. The family is going to make her homemade potatoes as she doesnt do fake. If she will eat it, im sure everyone will make her some!
Tonight her husband took in the baby to see her & she got to hold him on her left side with a bit of help.. they said she was all half smiles! =] When they put the baby seat on the bed to say goodbye, she reached for the seat, so slowly, but surely shes pulling her weight & keeping up a good fight! Its so lovely to know miracles to happen! I just cannot believe this! Thank goodness!
 
That's wonderful that she's making so much progress! As a therapist, it's good to hear that they are being aggressive with her therapies since stroke patients usually make the most progress early on. As a person, I'm glad that so many wonderful things are happening for her and her family! I will continue to pray for her recovery!
