My husband and I are starting to do a cheese and wine night one day a week. I was wondering if anyone had any favorite, good, or exotic cheeses we should try? Wine suggestions are welcome as well!
 
I'm a huge bleu cheese fan. Also liked smoked gouda. My family always had Brie at get-togethers, with water crackers or something similar. I'm not really a cheese connoisseur - and I'm not a wine fan - but have fun, it sounds like it!!
 
Port wine cheese with red wine... oh my! It puts a smile on my face just thinking about it :)
 
Depneds on what your looking for reallly. Would you prefer soft or hard cheeses?

My personal favorite is baked brie. We take a shepards loaf od bread, (they aren't too hard to find, they are round and has a good hard crust. just cut out a bowel type shape in the middle and cube what you take out. Dust all the bread with olive oil and 1 tbl diced garlic put it in the oven for like 5 mins. Then dice the brie and put it in the bowl of bread and bake on at maybe two hundred degrees.

That with a Merlot, like yellowtail, I could eat it every day. Delisious!

Ha, I wish I could be of more help with the wine (I'm a vodka and jager girl so wine just isn't up my alley) but my favorite cheese is pepper jack!!! If you could find a good wine to go with some I'd probably reconsider lol
 
The hubby and I also try to do a fancy dinner at home with wine every week. My best advice for wine, is to try it all! You never know what you will or won't like until you try it. We like to keep a few bottles of wine on hand at all times, some spendy, some not so spendy. You'll sometimes be surprised at what you end up liking, or you find that awesome bottle of wine that you'd never expect. I'm more a fan of red, the hubby likes white, but we end up both liking a lot of blushes.
 
I am the Cheddar kind of girl. The sharper the better. I think I had brie before and it was delicious. I am trying to remember if it was definitely brie though. It was a fancy cheese is all I remember.
 
I love brie and ghouda, but my favorite is habanero cheddar.
 
Theres a French cheese called Boursin...its to die for. I dont like cheese except for this..its a soft cheese spread type stuff, with a nice crumbly, creamy texture and comes in 2 or 3 flavours
 
Hmm.. I forgot goats cheese. I absolutely LOVE it but it isn't easy to find here. Any with garlic and herbs mixed in.. the only cheese I could eat straight without it being on something.
 
Red wine (even white zinfandel or white merlot) are great with cheddars. My favorite are smoked (or non-smoked) white cheddar. I have a nice wine collection and always have cheese on hand. lol
 
I personally like sheep cheeses, but they're harder to find. They're much milder than the goat cheeses, which are fairly strongly flavored of goat, which allows the flavor of the cheese to come through more; I find them a bit milder than cow cheese, even. There's also a soft sheep-goat-cow cheese that they have at some grocery stores that I like (can't remember the brand, but they have a couple different ones that are fairly similar... I'll have to try to look for it). Manchego cheese is nice for the harder ones. I typically like soft cheeses more than hard cheeses. If you can find a good one, Morbiller (sp?) is nice - it is traditionally poured in two batches - morning and evening - with a layer of ash in the middle, so the two halves of the cheese taste different.

Any good grocery store that has a decent cheese section (not like the safeway cheese sections they're getting now with a bunch of "exotic" cheeses, but a real cheese section) ought to have someone in charge of the cheeses (or they do around here) - you can ask them for advice as well :)
 
Wow, thanks guys! I have a whole month planned, at least! I think I like your idea Equus Peduus, maybe go get some info from a nice cheese store, to get the basics at least. I know my wine, but not the cheese. Always good to try something new! Thanks again, you guys are the best!
 
I looove those babybel cheeses in the little waxy coverings... mmmmmm.... cheeeeese..... and havarti is another one of my faves
 
Are you near a Whole Foods? If so, go there and to the cheese section. They have every cheese you could ever want and they will give you a sample of absolutely anything.
 
I'm not an exocitc cheese person, (boring just love American LOL), but try going to the exocitic cheese section of your market and picking some out that sound good. I don't know if that's a good idea or not, you might have better suggestions (sorry didn't read all the posts), but I just thought I would right that in. I know my market has an exocitic cheese section.

Also, I thought I've heard that sometimes when people have wine and cheese parties they also use grapes, I don't know if that is true or not, but I also thought I'd write that in, maybe someone can correct me if I'm wrong.

Well I'm from Wisconsin so does anyone wonder if I like cheese? I LOVE CHEESE! The only cheese I don't like is: cheddar and pepper cheese.
I love Brick, muenster, swiss of all kinds, but partial to baby swiss.
Havarti Dill is a great cheese to eat with triscuits and grapes.
I like both brie and camembaert cheese with dried appricots.
You can get a blueberry and cranberry soft cheese here from the grocery store that I really love too.
Cheese is phenomenal!
I'm not so much a wine person though--I like tequila and rum and honestly cheese doesn't go so well with either IMO
 
I personally don't like brie as much as most of the other soft cheeses - it's not a very interesting cheese. Neither is Camembert. heh. Not that they're bad... but I like to explore other soft cheeses because they're typically more fun :)

Some cheeses go very well with chocolate (especially dark), and some with fruits. Obviously, bread and/or crackers are important as well. Didn't know if Whole Foods was out where you are, which is why I didn't mention it... they don't have *every* cheese you could want (go to France or Switzerland or something for that :p), but the ones out here do typically have a good selection, and a person to explain them. :)
