I usually try to catch them when they're sleeping so they stay still. I've also found that it's best to take pictures in the morning/afternoon so you have them in natural lighting, which seems to help with not washing out their color. I also have an external flash attachment for my camera that...

I've found it helpful to use a small tile on my lap when grooming fussy chins. That way they don't get as much traction if they're squirming, and they tend to calm down more quickly. It makes it easier on the chin, and me.

Most of mine tend to poo less during playtime. As long as they actually ARE going, and everything looks normal, I wouldn't worry:))

If you had a playpen that was big enough to fit around the back of the cage, that would probably work best. That way they wouldn't be able to get out by going under the cage. It might be hard to find a metal playpen large enough to fit around the cage, but you could always get cardboard panels...
