I'm hosting a party and thought we could all share our favorite Superbowl recipes. Mine is jalapeno "mice"..they're amazing. They're called mice because the stems on the peppers sort of look like tails and the peppers halved sort of have the shape of a mouse. I've been making these since I was little- they're very easy. Don't worry if you don't like hot/spicey..as long as you remove all of the seeds, they're not hot at all!

This recipe makes 24 "mice".

12 jalapeno peppers
1 package cream cheese
1 lbs sausage
Shredded parmesan cheese

1. Wash jalapenos. Cut in half & remove seeds.
2. Brown sausage. Once browned, add cream cheese. Simmer until cream cheese is melted. Add parmesan cheese to your taste.
3. Spoon sausage and cheese mixture into halved jalapenos. Align on baking sheet, sprinkle parmesan cheese on top of peppers.
4. Place in oven at 350 until cheese on top begins to brown.
5. Enjoy!

Oh, one more thing. GO COLTS!!

Easy Spinach Dip

1 package frozen chopped spinach
1 package Knorr vegetable soup mix (recipe on package)
1 cup mayonaise
8 ounces sour cream
Green onions (optional)
Serve in a 1-pound loaf of round sourdough bread scooped out into a bowl
Good with fresh vegetables and/or crackers

Drain and squeeze spinach between paper towels and chop several times so it's not stringy and mix all ingredients. Refrigerate overnight. Delicious!
 
Texas caviar:

1 can black eyed peas

1 can black beans

1 can shoepeg corn

1 jar chopped pimentos1 jar chopped jalapeno peppers

1 small red onion--chopped

2 stalks celery--chopped

for Marinade:

1/2 c olive oil 1/2 c vegetable oil

1/2 c sugar

1/2 c apple cider vinegar

Pour all cans & jars into colandar, drain and rinse. Add onions, celery, peppers and pmentos.

Heat marinade to disolve sugar. Pour over mixture and refrigerate overnight. Drain and serve with nacho chips.

Brown one pound of your choice hotness sausage. In a large microwave bowl/dish, combine 1 large jar of salsa tomate (mild to "call the fire dept", any spiciness will work) with a 1 pound of Velveeta/melting cheese, cubed to about 1". Microwave the salsa and cheese in 60 second intervals, stirring between. Once the cheese and salsa is mostly melted and combined, drain the sausage and add it to the cheese mixture. Stir well and microwave at least 60 seconds more. Serve with tortilla chips or pita chips. Stays hot best if kept in a hot water bath, but reheats well if it's kept covered.
