I'm getting a bit tired of the same old same old! When it comes to casseroles I'm always making:
tuna casserole
tater tot casserole
King Ranch Chicken
Stuffed Shells (which probably really isn't a casserole!)

Can someone give me some of their casserole recipes to try?

Grammy Hahn's "Shepherd's" Pie (technically called a Cottage Pie b/c Shepherd's pie uses lamb instead of beef.)

Make/buy the biggest pie shell you can and prebake it for 15 minutes in a deep (minimum 3") pan.

Brown steak tips/stew beef/ a cut up beef roast in a little bit of olive oil and your herbs/spices of choice (I marinate the meat in a 2:1:1 mixture of beef broth, Jack Daniel's Old #7 and Lea and Perrin's overnight, and toss in rosemary, salt, pepper and some sage while it's cooking). Remove meat from the pan and add 3 Tbsp. flour blended w/ 1/4 cup of drippings from meat to whatever's left in the pan. Add beef stock if necessary, and bring to boil to make gravy, stirring occasionally.

Layer: meat, gravy, a bag of frozen soup/stew vegetables, and about 1 qt. mashed potatoes in pie shell.

Bake @ 350*F for 30 minutes. Top with at least 1 cup of shredded cheese (I'm a cheddar girl, but colby works well too) and bake until cheese is melted and brown (total cook time should not exceed 1 hr. unless you've got oven issues).

My grandmother made this a lot because it makes such efficient use of leftovers and she had anywhere upwards of 7 mouths to feed. I make it b/c it's darn good!
 
I'm still absolutely in love with the Mac 'N Cheese Dog Casserole that someone suggested from Rachael Ray's show! Hot dogs and macaroni... what more do you need?!
 
I have my own version of Shepard's Pie which is ground beef, tomatoes w/ chipotle chilies, Corn and mashed potatoes. It's very tasty.

I also like this breakfast casserole. Very simple to make:

6 Eggs
1 cup Half & Half
2 tablespoons Green Onions
Salt, to taste
Black Pepper, to taste
Butter, to grease the pan
6 slices Texas Toast, (thick cut, crusty white bread)
1 pound Pork Sausage, cooked & drained
1 cup Grated Cheddar Cheese
In a small bowl, beat the eggs until they loosen up. Add the half and half, and green onions. Mix well, highly season with salt and pepper and set aside.
Butter a 12 by 10-inch baking pan. Line the pan with the bread, cutting and rearranging, if needed. Sprinkle the bread with the cooked sausage and cheese. Pour the egg mixture over the entire pan. Cover and refrigerate overnight.

Preheat oven to 350 degrees. Cook covered for 25 to 30 minutes or until the egg mixture is set.
 
I make this a lot:

Paula Deen's Chicken and Rice Casserole

2 (14 1/2-ounce) can green beans, rinsed and drained
3 cups diced cooked chicken
1 medium onion diced and sauteed
1 (8-ounce) can water chestnuts, drained and chopped
1 (4-ounce) can pimentos
1 (10 3/4-ounce) can condensed cream of celery soup
1 cup mayonnaise
(6-ounce) box long-grain and wild rice, cooked according to package directions
1 cup grated sharp Cheddar
Pinch salt

Directions

Preheat oven to 350 degrees F.

Mix all ingredients together and pour into a greased 3-quart casserole dish. Bake for 20 to 25 minutes or until bubbly.
