Hello from me

A week ago I bought a chinchilla and named LARA is female (4 months )

I give to eat Nature Bunny pallets and hay but likes to eat FOOD Charlie.

I am in a dilemma which one is best.

Charlie or Bephar?

He may take some time to adjust. Chins are not especially fond of change, so keep offering the Beaphar and make sure he has lots of hay to munch on while he transitions to the new food.

The nibbling on the fingers is normal, especially if you have any sort of food scent on them. When you don't have food scent on your hands, nibbling (not hard biting and drawing blood) with a chin is a form of grooming. It's what chins do to each other, and he's sharing that with you.
 
Maybe try opening the cage door and putting your hand just outside the cage, allowing her to smell your hand but not taking over her space with it? Sometimes chins don't like their cages being invaded, especially if a lot has changed recently and they don't know you.

I had to reintroduce myself to my chins after 8 years of not living with them, and I spent a lot of time sitting near their cages, holding my fingers near the bars of their cage, opening their cage door and stepping away slightly so they didn't feel like I was looming.

Also, chinchillas have several different types of bites - soft ones just mean they are trying to figure out what is near them, exploratory bites. You can tell if they are angry bites if they lunge at you and bark or hunch up before biting.
