Halloween is long gone, but I still have lots of pureed pumpkin leftover. It usually ends up as pumpkin bread and pumpkin soup around here. But I seem to have even more leftover than usual! So share your (pureed) pumpkin recipes please!
Here is my family recipe for pumpkin bread:
5 1/4 cups all purpose flour
4 cups sugar
1 1/2 cups oil
1 cup water
6 eggs
2 1/4 teaspoons nutmeg
2 1/4 teaspoons cinnamon
2 1/4 teaspoons baking soda
2 cups pureed pumpkin
1 cup chopped walnuts (optional)
Combine dry ingredients in a large mixing bowl: flour, sugar, baking soda, and spices. Add eggs, oil, and water. Mix until well blended. Add pumpkin and mix until well blended. Fold in nuts, if desired.
Bake in loaf pans for 1 hour to 75 minutes. Makes 5 loaves.
