I made this up today while snowed in! It is quite delicious, one of the better soups I've created in awhile

1 32 ounce box of beef broth (can use vegetable for vegetarian)
1 29 ounce can of tomato sauce ( I actually used generic)
1 bag of frozen Italian style vegetables (again I used generic)
1/2 box of frozen chopped spinach, thawed and drained
2 cans of canneloni beans, drained
1 cup of acini de pepe cooked and drained
12 oz of meatballs (I used chicken meatballs)
pinch of Italian seasoning
pinch of dried onion
fresh grated romano or parmesan cheese


Basically I stirred the tomato sauce into the beef broth and brought it to a simmer, I added both cans of beans and the spinach. Stirred well then added the seasonings. Next I added the vegetables and meatballs and brought to a simmer while the acini di pepe were cooking.

When the acini di pepe is done, drain well. Do not add this to the soup--they will continue to soak up the soup broth and they get mushy (this has happened to me in the past lol!) Add a few tablespoons of the pasta to a bowl and ladle the soup over top. Sprinkle soup with grated cheese.

I also made corn muffins to go along with it.

Quite hearty and satisfying--and really a no muss soup!

Pepe Laurie, really? I mean I understand you are snowed in and can't get to the store, but seriously I think you have been watching too many survival shows on TV.

And for those who don't believe me, do a spell check on those words. They translated to "acidic pee" :hilarious:
 
Laurie, this looks really yummy! I'm going to try it this weekend.

Do you think I could use frozen meatballs?

Do you think this would freeze well? I'm all about making extra quantities and freezing for later.
