Timothy Hay versus Grass Hay?

My Oxbow food package (and a lot of info I've seen around) says to feed chins unlimited grass hay and alfalfa hay (alfalfa as a treat only after 1yr old.)

At the moment, I'm feeding Chester timothy hay and alfalfa chews, which he loves. What's the difference between timothy hay and grass hay? Are they interchangeable?

Timothy hay is a type of grass hay. Other grass hays include Orchard and Bermuda. Timothy hay is the most common hay given to chins.

some grass hays will be softer than timothy. orchard and meadow grass are examples of softer hay.
