Question about safe woods and metals

What types of metals are safe for chins? I want to make a wheel for mine, but am not sure what to make it out of. What woods are safe? I want to make ledges for them, as well. There are different answers everywhere I look!

I recommend poplar because it is easy to find and less knotholes than pine.
