Well, Gearing up for surgery here, and thinking about how many pancakes and eggs I want to eat, or prepared frozen foods. I was thinking about doing some beef stroganoff, maybe some beef stew. I could do some sphagetti sauce too.
What else could I make in a batch and freeze so we can just take food out and reheat?
Would meat loaf be good? I was thinking about making burger patties and wrapping in wax paper so he can just take them out and grill them. I want to make it easy on both of us for a few weeks. Are there any chicken recipes you can suggest that would freeze and reheat well?
 
This stuff is awesome. It's been my favorite comfort food for years and the recipe was passed on to me by a friend that has been making it for 20 years easily. I usually make a double batch and freeze it in aluminum loaf pans. Makes for the perfect serving for 2 - 3 people, depending on how much you eat.

Bake at 350 for about 30 to 35 minutes.
Serves 6
Best if made a day ahead.
Can be frozen

2 lbs ground beef, browned and drained
1 large onion diced and browned and drained
1 large can of diced tomatoes
½ - 1 lb of sharp cheddar cheese, cubed or shredded
1 large can of mushrooms drained, pre-sliced 8 oz or 16 oz if you like mushrooms
1 package of thin noodles , 8 oz cooked and drained
1 8 oz can of tomato sauce

Mix beef, onion, tomatoes, mushrooms, cheese, tomato sauce and noodles in a 2 qt or larger casserole dish, salt and pepper to taste. Top with bread crumbs and Parmesan cheese if desired or serve it with Parmesan cheese. Serves about 6 people. I usually throw a package of frozen peas in too.

Great served with garlic bread or Parmesan bread.
