I've had my chinchilla for almost two weeks now. When I first brought her home she was super sweet and didn't mind being held. I've been spoiling her like no other and been letting her out of her cage whenever she feels like it. Now, she panics when I hold her and demands I set her down and just isn't herself. What do I do, if there's anything I can do, to settle her back down? Or is it normal?

I think they are just like people as far their mood goes. Most arent crazy about being held, but I think all of them have their days of "not in the mood".
I would suggest that you just keep interacting with her, 2 weeks is a short time for bonding.

I was scritching Marble this morning and went to rub her tummy, which she always lets me do, and she stood up and sprayed pee at me. Never in 7 years has she ever done that to me. Talk about moody...lol. They all have their moments.

When I went to the SPCA to meet Luna, she immediately snuggled into my arms and was perfectly content there. For the first couple of days I had her, she would let me pick her up and put my hand in her cage with no problems. Then she settled in and decided that she didn't want to be bothered so she would spray me every time I would put my hand in her cage. I backed off and let her be for a while. After a few more days, she would let me give her scritches through the bars. It's been about 2 months now and she is completely trusting again. She comes to the side of the cage for scritches whenever one of us comes near, and I can't put my hand in her cage without her hopping all over me, looking for love. I think your chinny is just going through an adjustment period and will settle down for you again.

Each chin has their own likes and dislikes. Which can vary with mood.

of my 5 chins, 4/5 always hate being messed with when they are waking up or for the first hour or two after. Father craves attention and affection while his son stay away from everyone. Ive also noticed over time that they hate being messed with when they are in there tube. One hates being touched on the bottom half of his body, while another hates being touched anywhere on his head.

They all have random dislikes. And certain times or locations they don't want to be messed with.
