Im a simple girl when it comes to chicken salad. I make it much like tuna.
some chopped up celery, some chopped up onion to taste, lite mayo, salt & pepper. Personally I do not like huge chunks of chicken in my salad, so i chop up the chicken real small. I just mix is and let it sit so the flavors blend. Put it on some whole grain bread with some lettuce and lunch is served!
 
Thanks, Michelle. That's like pretty much all the recipes I've seen. I just thought maybe there was some way of jazzin' it up a little. I once had a chicken salad sandwich (on a croissant) in a tea room and they had some chopped walnuts in it. It added a nice texture and flavor to it. I think I'll add some walnuts.
 
you can also add chopped up apples with the walnuts & celery. maybe skip the onion though...........not sure how apple & onion with mayo would taste??
 
I make my chicken salad like Arby's! LOL

It's very simple, just cut up cooked chicken, and add grapes (I use red), apples, celery, and mayonnaise. It doesn't need any seasoning, and the flavor is wonderful. It's very good with leftover cooked turkey after Thanksgiving, too.

Truly nom nom on some whole grain bread, or a croissant. :)

Here is mine. Sorry no measurements!
4 boneless skinless chicken breasts boiled, cooled and cubed
about 1 cup each seedless red and green grapes, sliced in half
add about 1 cup of cashews, more or less depending on taste
Add mayo to coat
sprinkle with crunchy chow mein noodles.
This is the simplest chicken salad ever and I LOVE it. I just add based on how it "looks" to me. But it's so easy and just delicious.
AND you have to do red and green grapes. It's just not the same with only the red or green.
We'll make this when I come for a visit this summer!!!
 
I think I've mentioned it here before, but my mom makes the most amazing chicken salad, its Curry Chicken Salad, I dont know the exact ingredients but if you're interested I could get them for you

I was going to say that Arby's has a good c. salad, although I've only tried it once.

I also like Fareway's chicken salad. Do you have a Fareway (grocery store) up there Carol?
 
OOo wait, I forgot to mention, I put chopped walnuts in mine! Sorry....:D
 
We have a recipe at work that calls for grapes, I really don't like grapes in it. The sweetness of the grapes just doesn't mix well with mayo. Blar!

I like a more savory chicken salad. I make a slurry of chicken base (or powdered bullion with a little hot water), poultry seasoning, sage, lots of onion powder and a little garlic powder. Mix this in the mayo to taste.
Add chopped onions and celery to the chicken as desired, then cover with the seasoned mayo.
