Does anyone have a great apple pie recipe? I was asked to make one for next Thursday, but I haven't made an apple pie in 10 years. The recipe I used to use has become misplaced. Instead of just trying a random recipe from another website, I was hoping someone here would have a favorite recipe that everyone just raves over.
 
Hard to go wrong by the Joy of Cooking apple pie recipe, with the crust recipe from the outside of the Crisco container. I'll dig it up after work if you haven't got a copy.

I like the pie filling from that site. Depending on your taste you can substitute the apple cider vinegar for lemon juice. My husband LOVES it with the vinegar. The secret to good apple pie is to keep the spices to a minimum and let the apple flavor come out. Use good baking apples - granny smith's are the best, but you could use galas or other baking apples. Just 1/8 or 1/4 teaspoon of cinnamon at the most.

As for the crust.. I have a secret recipe for that. :)

The vodka keeps gluten from forming and the crust is nice and flaky because of it. The best part is that you can make it in a food processor. This makes it a ton easier to make... :)

This only works if you own a food processer. It's a lot harder to make things in the food processor when you don't have access to one.

Actually, I think most pie crusts can be made in the food processor. Or at least some can be...
 
You have to be careful with making a crust in the food processor or you end up building up a lot of gluten and making a tough crust. The alcohol in the vodka is what keeps the gluten from forming. I remember being told to gently work in the shortening to keep the crust flaky, gently work it in with a pastry blender.

I just actually got a food processor. I went for years without one, it is awesome. :)

You can make that crust without a food processor and you don't have to be careful with the dough...you can mix it up by hand just like you would with any other dough recipe, it would still work. The food processor just makes it so easy, and I am starting to get lazy in my old age... :)

Brittney - I have an old apple peeler...it's great! It will peel in apple in about 10 seconds. :)
 
Thanks guys, now to figure out which recipe I want to use. I found several mentions elsewhere of Alton Brown's apple pie recipe. Now I'm a Good Eats fan and find many of his recipes to be absolutely nummy. Has anyone tried it? He uses grains of paradise instead of cinnamon. I've never used grains of paradise and was wondering just what it would taste like....
